Lamington Forage Porridge
Who doesn’t love a good Aussie lamington? The coconut, the chocolate, the raspberry jam.. it’s bloody delicious! But if you’ve ever looked at any ‘healthy’ leamington recipes you will see just how complicated it is to recreate these delicious treats in their original form. My solution? Like any great flavour combination, turn it into a porridge recipe!
The best parts about this recipe are: you probably already have the ingredients in your kitchen (no need for nut flours and thermo mixers here!), it’s totally delicious and totally Instagram worthy.
- 1/2 cup Forage Porridge
- 1/2 tbs cacao powder
- 1 tbs shredded coconut + 1 tbs for topping
- 1/2 tbs coconut butter
- 1.5 cups water
- 1/2 cup coconut milk
- Handful of raspberries
- Add porridge, cacao, shredded coconut and coconut butter to saucepan and simmer on a low heat, stirring and slowly adding the water and lastly the coconut milk for around 3-5 minutes or until desired consistency is achieved.
- Remove from the heat and pour into bowl, topping with extra coconut and raspberries.
